I was flipping through my LEON book in search of a new breakfast idea and came across this delicious combination! We have a herb garden so I am always looking for recipes that call for fresh herbs. The toasted walnuts added a pleasant crunch to the melted goat cheese and flavourful thyme.
>Bread or a bun for toasting
1. Brush bread with olive oil
2. Crumble goat cheese, broken walnuts, and some thyme on the bread
3. Broil or toast until cheese is soft and warm and walnuts are browned
4. Top with more fresh thyme, drizzle with olive oil, and enjoy!
This is so good! Tried it this morning, with fresh Thyme from the garden! Heaven.
