It was a rainy day so I decided to make a couple batches of granola! I believe that everyone should have a good granola recipe. I make mine periodically so I can enjoy a good, pre-made healthy breakfast. Granola is delicious with yogurt, milk, and a topping of fresh fruit!  This recipe is adapted from one I found here.

Ingredients:

7 cups oatmeal
1 cup wheat germ
1 cup shredded coconut
1 cup slivered almonds
½ cup chopped pecans
2 tsp. cinnamon
1 tsp. salt
½ cup olive oil
½ cup honey
½ cup water
1 tbsp. vanilla

Method:

Preheat oven to 300 degrees. Mix together oatmeal, wheat germ, coconut, almonds, pecans, cinnamon and salt. Melt ½ cup honey (if not liquid honey) in ½ cup olive oil. Add water and vanilla to honey and oil mixture. Mix wet and dry together. Line shallow pans with parchment paper and spread out thin layers of the mixture. Bake for 20-25 minutes. Cool each batch and add in raisins, craisins, currents, diced dried apricots, diced dates or whatever you desire. Keep in cool, dry place, or freeze for future use.
